Ginger Processing Plant

The dried rhizomes, which may be scrapped or peeled before drying, constitute the spice that is esteemed for its flavor, pungency and aroma. It is widely used for culinary purposes in gingerbread, biscuits, cakes, puddings, soups, and pickles. It is also used to spice curry powder, ginger soda/beer, and ginger ale and ginger wine. In India and the Far East the herb is used as a local medicine and is greatly treasured for its stimulating carminative and counter-irritant effects. In addition ginger is used in perfumery and flavouring of essences.

Process Description:

Raw gingers are separated from roots and leaves. The ginger is cleaned and separated from bad ginger. Cleaned gingers are peeled and chopped and send to a soaking unit for a definite period. Soaked gingers are dried in a specially designed dryer. Essential oils and oleoresin extracted from the ginger. The dried gingers are then pulverized to make it powder and further are packed as per requirements.
